Pumpkin Cranberry Muffins

  • 2 cups flour
  • 3/4 cup sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 1/3 cup allspice
  • 2 cups vegetable oil
  • 3 large eggs
  • 3/4 cup pumpkin (canned)
  • 2 cups cranberries (fresh or frozen, chopped)

Method

  1. 1 Preheat oven to 400°F.
  2. 2 Sift together flour, sugar, baking powder, salt, cinnamon, and allspice; set aside.
  3. 3 Beat vegetable oil, eggs, and pumpkin until well blended.
  4. 4 Add wet ingredients to dry ingredients all at once; stir until moistened.
  5. 5 Fold in chopped cranberries.
