Pumpkin Cheesecake
Ingredients
- 8 ounces reduced-fat cream cheese
- 8 ounces non-fat cream cheese
- 4 eggs
- 1 1/4 cups egg whites
- 1 cup sugar
- 1 can (29 ounces) pumpkin puree
- 1 teaspoon ginger
- 1 tablespoon cinnamon
- 2 graham cracker pie crusts (9 inch)
Method
- 1 Preheat oven to 350°F.
- 2 In a large bowl, beat cream cheeses, eggs, and sugar at medium speed until creamy.
- 3 Add egg whites, pumpkin, ginger, and cinnamon; mix until well combined.
- 4 Spoon filling evenly into two pie crusts.
- 5 Bake for 50 minutes until the center is firm.
