Pumpkin Bran Muffins With Pecans

Ingredients

  • 2 tablespoons sugar (divided)
  • 1 1/2 teaspoons cinnamon (divided)
  • 1 cup bran flakes
  • 1 cup skim milk
  • 1 cup flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup canned pumpkin
  • 1 egg
  • 1 tablespoon vanilla extract
  • 1/4 cup finely chopped pecans

Method

  1. 1 Preheat oven to 400°F. Spray a 12-cup muffin pan with cooking spray.
  2. 2 In a small bowl, combine 2 tablespoons sugar and 1/2 teaspoon cinnamon; set aside.
  3. 3 In a large bowl, combine bran flakes and milk; let stand for 5 minutes.
  4. 4 Whisk remaining 6 tablespoons sugar, 1 teaspoon cinnamon, flour, baking powder, and baking soda into the cereal mixture. Stir in pumpkin, egg, and vanilla.
