Pumpkin Bran Muffins With Pecans
Ingredients
- 2 tablespoons sugar (divided)
- 1 1/2 teaspoons cinnamon (divided)
- 1 cup bran flakes
- 1 cup skim milk
- 1 cup flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 cup canned pumpkin
- 1 egg
- 1 tablespoon vanilla extract
- 1/4 cup finely chopped pecans
Method
- 1 Preheat oven to 400°F. Spray a 12-cup muffin pan with cooking spray.
- 2 In a small bowl, combine 2 tablespoons sugar and 1/2 teaspoon cinnamon; set aside.
- 3 In a large bowl, combine bran flakes and milk; let stand for 5 minutes.
- 4 Whisk remaining 6 tablespoons sugar, 1 teaspoon cinnamon, flour, baking powder, and baking soda into the cereal mixture. Stir in pumpkin, egg, and vanilla.
- 5 Fold in dry ingredients gently. Spoon batter into prepared pan, sprinkle with pecans and reserved sugar-cinnamon mixture.
- 6 Bake for 20-25 minutes or until a toothpick inserted in center comes out clean.
