Puffed French Omelet
Ingredients
- 1 egg
- 1 tablespoon butter
- 1 tablespoon cold water
- Salt and pepper to taste
Method
- 1 Separate the egg whites and yolks. Beat yolks until thick and lemon-colored, then beat whites until stiff peaks form.
- 2 Gently fold the whites into the yolks. Season with salt and pepper, and add 1 tablespoon of cold water per egg.
- 3 Melt 2 tablespoons of butter in a frying pan over medium heat until hot.
- 4 Pour in the egg mixture and let stand until the edges are set and a knife inserted in the center comes out nearly clean.
- 5 Place the pan in the oven until the omelet puffs up. Score the middle with a knife, fold in half, and serve immediately on a hot platter.
