Prune Bread Pudding

Ingredients

  • 1 lb stoned and stewed prunes
  • 3/4 lb Allinson bread and butter, thinly sliced
  • 3 eggs
  • 1 pint milk
  • Sugar to taste

Method

  1. 1 Grease a pie dish. Line the bottom with a layer of bread and butter slices.
  2. 2 Arrange a layer of stewed prunes over the bread. Repeat layers until the dish is full, finishing with bread and butter.
  3. 3 Pour a little prune juice over the layers. Beat eggs with milk and sugar, then pour the custard over the mixture.
  4. 4 Let soak for 1 hour. Bake for 1 hour. Optionally, pour off liquid once or twice during baking and spoon it back over.
