Pressed Blueberry Bread Pudding

Ingredients

  • 1 quart blueberries
  • 1 cup water
  • 1/2 cup sugar
  • 8 slices bread, cut 1/2 inch thick
  • Whipped cream, sweetened

Method

  1. 1 Combine blueberries, water, and sugar in a saucepan; boil for a few minutes.
  2. 2 Line the bottom of a square pan with 4 bread slices. Pour half the berry mixture over the bread.
  3. 3 Place remaining 4 bread slices on top of the berries. Pour the rest of the berry mixture over the bread.
  4. 4 Place another square pan on top and weight it down to press the pudding. Refrigerate until cool.
  5. 5 Cut into squares, remove from pan, and serve with sweetened whipped cream.
