Pressed Blueberry Bread Pudding
Ingredients
- 1 quart blueberries
- 1 cup water
- 1/2 cup sugar
- 8 slices bread, cut 1/2 inch thick
- Whipped cream, sweetened
Method
- 1 Combine blueberries, water, and sugar in a saucepan; boil for a few minutes.
- 2 Line the bottom of a square pan with 4 bread slices. Pour half the berry mixture over the bread.
- 3 Place remaining 4 bread slices on top of the berries. Pour the rest of the berry mixture over the bread.
- 4 Place another square pan on top and weight it down to press the pudding. Refrigerate until cool.
- 5 Cut into squares, remove from pan, and serve with sweetened whipped cream.
