Preserved Whole Cherries

Ingredients

  • 1 lb small cherries
  • 1 cup water
  • 2 lb large cherries
  • 2 lb granulated sugar

Method

  1. 1 Boil the small cherries in water until tender. Strain the liquid to create a cherry syrup, discarding the fruit.
  2. 2 Layer the large cherries and sugar alternately in a preserving pan. Pour the reserved cherry syrup over the layers.
  3. 3 Boil rapidly over high heat until the syrup thickens and turns a good color, ensuring the syrup covers the fruit.
  4. 4 Remove from heat and let the cherries cool completely on a rack. Pack into jars for storage.
