Preserved Seville Oranges

Ingredients

  • Best Seville oranges
  • Salt and water
  • Clarified sugar
  • Apple jelly (from Pippin apples)
  • Orange juice

Method

  1. 1 Peel oranges neatly and soak in salted water for 2 hours.
  2. 2 Boil oranges until tender, drain, and place in a preserving pan.
  3. 3 Cover with clarified sugar, weigh down with a plate, and heat slowly to a boil.
  4. 4 Boil quickly until frothy, then rest overnight. Drain syrup, boil until smooth, add more sugar, return to oranges, and boil again.
  5. 5 Repeat the boil and rest process for a third day.
  6. 6 On the fourth day, drain oranges. Strain syrup, boil with clarified sugar, apple jelly, and orange juice until thick.
  7. 7 Pack oranges into jars and cover with the hot jelly mixture. Seal when cool.
