Preserved Seville Oranges
Ingredients
- Best Seville oranges
- Salt and water
- Clarified sugar
- Apple jelly (from Pippin apples)
- Orange juice
Method
- 1 Peel oranges neatly and soak in salted water for 2 hours.
- 2 Boil oranges until tender, drain, and place in a preserving pan.
- 3 Cover with clarified sugar, weigh down with a plate, and heat slowly to a boil.
- 4 Boil quickly until frothy, then rest overnight. Drain syrup, boil until smooth, add more sugar, return to oranges, and boil again.
- 5 Repeat the boil and rest process for a third day.
- 6 On the fourth day, drain oranges. Strain syrup, boil with clarified sugar, apple jelly, and orange juice until thick.
- 7 Pack oranges into jars and cover with the hot jelly mixture. Seal when cool.
