Preserved Seville Oranges In Sugar Syrup

Ingredients

  • Seville oranges
  • Spring water
  • Sugar
  • Water (for syrup)

Method

  1. 1 Soak whole Seville oranges in spring water for 3-4 days, changing the water daily.
  2. 2 Carefully grate off a small amount of the outer zest, avoiding the bitter white pith.
  3. 3 Prepare a thin sugar syrup, bring to a boil, then remove from heat and let cool until warm.
  4. 4 Add the soaked oranges to the warm thin syrup and simmer gently over low heat.
  5. 5 Transfer oranges and syrup to a container; after 1-2 days, scald the mixture again.
  6. 6 Repeat the scalding process the following day.
  7. 7 Prepare a thick sugar syrup, remove oranges from the thin syrup, and drain them on a cloth.
  8. 8 Place drained oranges into the hot thick syrup and simmer gently.
  9. 9 Repeat simmering in the thick syrup every few days until the oranges are sufficiently preserved.
