Preserved Seville Oranges In Sugar Syrup
Ingredients
- Seville oranges
- Spring water
- Sugar
- Water (for syrup)
Method
- 1 Soak whole Seville oranges in spring water for 3-4 days, changing the water daily.
- 2 Carefully grate off a small amount of the outer zest, avoiding the bitter white pith.
- 3 Prepare a thin sugar syrup, bring to a boil, then remove from heat and let cool until warm.
- 4 Add the soaked oranges to the warm thin syrup and simmer gently over low heat.
- 5 Transfer oranges and syrup to a container; after 1-2 days, scald the mixture again.
- 6 Repeat the scalding process the following day.
- 7 Prepare a thick sugar syrup, remove oranges from the thin syrup, and drain them on a cloth.
- 8 Place drained oranges into the hot thick syrup and simmer gently.
- 9 Repeat simmering in the thick syrup every few days until the oranges are sufficiently preserved.
