Preserved Raspberries In Sugar Syrup
Ingredients
- 1 lb fresh raspberries
- 1 lb double refined sugar
- 1/4 cup raspberry juice
- 1/4 cup water
Method
- 1 Pick ripe raspberries, ensuring they are not overripe.
- 2 Combine sugar, raspberry juice, and water in a pot.
- 3 Boil the mixture to create a syrup, then skim off any scum.
- 4 Add the raspberries to the syrup and boil gently for a short time.
- 5 Remove the berries and boil the syrup alone briefly to preserve color.
- 6 Once the syrup is cool, pot the berries and store.
