Preserved Morella Cherries In Syrup
Ingredients
- 1.5 cups white currant jelly
- 3 cups fine sugar
- 2 lbs Morella cherries, stoned
- 1.5 cups red currant jelly (for Carnation cherries)
- 2 lbs Carnation cherries, stoned
Method
- 1 Stone the cherries.
- 2 Combine the appropriate jelly (white for Morella, red for Carnation) with sugar in a large pot.
- 3 Heat the mixture over medium heat until it boils, then skim off any foam.
- 4 Add the stoned cherries and simmer gently until they become tender.
- 5 Increase heat and boil rapidly until the mixture thickens and becomes clear.
- 6 Transfer the hot cherries and syrup into sterilized jars or glasses.
