Ingredients

  • 1.5 cups white currant jelly
  • 3 cups fine sugar
  • 2 lbs Morella cherries, stoned
  • 1.5 cups red currant jelly (for Carnation cherries)
  • 2 lbs Carnation cherries, stoned

Method

  1. 1 Stone the cherries.
  2. 2 Combine the appropriate jelly (white for Morella, red for Carnation) with sugar in a large pot.
  3. 3 Heat the mixture over medium heat until it boils, then skim off any foam.
  4. 4 Add the stoned cherries and simmer gently until they become tender.
  5. 5 Increase heat and boil rapidly until the mixture thickens and becomes clear.
  6. 6 Transfer the hot cherries and syrup into sterilized jars or glasses.
