Powdered Sugar Almond Cookies
Ingredients
- 1/2 cup butter
- 1/2 cup powdered sugar
- 1 1/2 cups pastry flour
- 1 cup almonds, blanched and cut into strips
- 1 teaspoon vanilla
- 3 egg yolks
Method
- 1 Cream butter and sugar until light. Beat egg yolks and mix in.
- 2 Add almond strips, vanilla, and flour. Mix gently until combined.
- 3 Roll dough into 1-inch balls, coat in powdered sugar, and place on floured baking sheets.
- 4 Top each ball with a piece of pistachio nut.
- 5 Bake in a 350°F oven for 10-15 minutes until pale golden.
