Pounded Sugar Ring Cookies

Ingredients

  • 1 cup butter
  • 2 cups sugar
  • 3 eggs, separated
  • Flavoring of choice
  • Flour, as needed
  • 1 egg white
  • Pounded loaf sugar

Method

  1. 1 Beat butter and sugar until creamy. Add egg yolks and flavoring, mixing well.
  2. 2 Stir in flour lightly to form a firm paste. Roll out thin on a floured surface.
  3. 3 Cut into circles and stamp out the center to create rings. Place on a floured pan.
  4. 4 Brush tops with beaten egg white and sprinkle with small lumps of pounded sugar.
  5. 5 Bake in a moderate oven (350°F) until light golden brown.
