Pounded Sugar Ring Cookies
Ingredients
- 1 cup butter
- 2 cups sugar
- 3 eggs, separated
- Flavoring of choice
- Flour, as needed
- 1 egg white
- Pounded loaf sugar
Method
- 1 Beat butter and sugar until creamy. Add egg yolks and flavoring, mixing well.
- 2 Stir in flour lightly to form a firm paste. Roll out thin on a floured surface.
- 3 Cut into circles and stamp out the center to create rings. Place on a floured pan.
- 4 Brush tops with beaten egg white and sprinkle with small lumps of pounded sugar.
- 5 Bake in a moderate oven (350°F) until light golden brown.
