Potted Meat Or Fish

Ingredients

  • 1 pound tender cooked meat or fish (2 cups)
  • 2 ounces fat cooked meat (¼ cup)
  • 2 ounces butter (¼ cup)
  • Mace and anchovy essence, if desired
  • Pepper and salt

Method

  1. 1 Chop the meat or fish very fine, then pass through a purée sieve.
  2. 2 Cream the butter and work it into the meat or fish with a wooden spoon.
  3. 3 Add seasonings to taste and press the mixture solidly into small jars or cups.
  4. 4 Pour melted butter to a depth of one-fourth inch over the top.
  5. 5 Set aside in a cool place to set.
