Potted Meat Or Fish
Ingredients
- 1 pound tender cooked meat or fish (2 cups)
- 2 ounces fat cooked meat (¼ cup)
- 2 ounces butter (¼ cup)
- Mace and anchovy essence, if desired
- Pepper and salt
Method
- 1 Chop the meat or fish very fine, then pass through a purée sieve.
- 2 Cream the butter and work it into the meat or fish with a wooden spoon.
- 3 Add seasonings to taste and press the mixture solidly into small jars or cups.
- 4 Pour melted butter to a depth of one-fourth inch over the top.
- 5 Set aside in a cool place to set.
