Potato Yeast Muffins

Ingredients

  • 4 tbsp butter
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 mashed potatoes
  • 1 ½ cups tepid water or milk
  • 1 cake yeast
  • Flour, as needed

Method

  1. 1 Cream butter, sugar, and salt. Add mashed potatoes, tepid liquid, and yeast. Stir in flour to form a stiff batter.
  2. 2 Cover and let rise overnight in a warm place.
  3. 3 Pour batter into buttered muffin rings until full. Let rise again until the rings are filled.
  4. 4 Bake in a slow oven (300°F) until golden brown.
