Potato Yeast Muffins
Ingredients
- 4 tbsp butter
- 1 tbsp sugar
- 1 tsp salt
- 2 mashed potatoes
- 1 ½ cups tepid water or milk
- 1 cake yeast
- Flour, as needed
Method
- 1 Cream butter, sugar, and salt. Add mashed potatoes, tepid liquid, and yeast. Stir in flour to form a stiff batter.
- 2 Cover and let rise overnight in a warm place.
- 3 Pour batter into buttered muffin rings until full. Let rise again until the rings are filled.
- 4 Bake in a slow oven (300°F) until golden brown.
