Potato Soufflé Cups With Creamed Filling
Ingredients
- 1 quart seasoned mashed potatoes
- 4-6 egg yolks
- 1 egg yolk for brushing
- butter for greasing mold
Method
- 1 Stir the mashed potatoes and egg yolks together over low heat until the mixture is dry and well combined.
- 2 Mold the potato mixture into a hollow cylinder or cup shape using your hands or a knife. Alternatively, press it into a buttered fluted mold and unmold.
- 3 Brush the exterior with beaten egg yolk and place in a moderate oven (350°F) for a few minutes to brown the surface.
- 4 Just before serving, fill the center with minced meat, chopped birds, chops, sweetbreads, or any creamed dish.
