Ingredients

  • 2 cups chopped potato
  • 1 cup milk
  • 1 egg
  • 1 teaspoon salt
  • 2 cups flour
  • 5 teaspoons baking powder
  • 2 cups hot water

Method

  1. 1 Parboil potatoes in skins for 15 minutes, then pare and chop fine.
  2. 2 Mix potatoes, milk, egg, and salt in a bowl.
  3. 3 Sift flour and baking powder, then stir into the potato mixture to form a smooth batter.
  4. 4 Thin the batter with hot water as necessary to reach desired consistency.
  5. 5 Bake on a greased griddle until golden brown.
