Potato Pancakes
Ingredients
- 2 cups chopped potato
- 1 cup milk
- 1 egg
- 1 teaspoon salt
- 2 cups flour
- 5 teaspoons baking powder
- 2 cups hot water
Method
- 1 Parboil potatoes in skins for 15 minutes, then pare and chop fine.
- 2 Mix potatoes, milk, egg, and salt in a bowl.
- 3 Sift flour and baking powder, then stir into the potato mixture to form a smooth batter.
- 4 Thin the batter with hot water as necessary to reach desired consistency.
- 5 Bake on a greased griddle until golden brown.
