Potato Flour Almond Shortbread Cookies

Ingredients

  • 1/4 lb potato flour
  • 1/4 lb fine wheatmeal
  • 4 oz granulated sugar
  • 4 oz butter
  • Juice of 1/2 lemon
  • 2 tsp ground bitter almonds
  • 1 egg

Method

  1. 1 Cream the butter by beating it around the sides of a pan with a wooden spoon until light and fluffy.
  2. 2 Add the well-beaten egg and lemon juice, then mix in the sugar, wheatmeal, potato flour, and ground almonds.
  3. 3 Beat the mixture vigorously for 20 to 30 minutes until smooth.
  4. 4 Drop small lumps of batter onto floured baking sheets.
  5. 5 Bake in a moderate oven (350°F) for 10 to 15 minutes.
