Potato Flour Almond Shortbread Cookies
Ingredients
- 1/4 lb potato flour
- 1/4 lb fine wheatmeal
- 4 oz granulated sugar
- 4 oz butter
- Juice of 1/2 lemon
- 2 tsp ground bitter almonds
- 1 egg
Method
- 1 Cream the butter by beating it around the sides of a pan with a wooden spoon until light and fluffy.
- 2 Add the well-beaten egg and lemon juice, then mix in the sugar, wheatmeal, potato flour, and ground almonds.
- 3 Beat the mixture vigorously for 20 to 30 minutes until smooth.
- 4 Drop small lumps of batter onto floured baking sheets.
- 5 Bake in a moderate oven (350°F) for 10 to 15 minutes.
