Potato Dinner Rolls
Ingredients
- 1 cup mashed potatoes
- 1 tbsp sugar
- 1/2 cake yeast
- 1/2 cup tepid water
- 1/2 pint milk
- 1/2 cup butter
- 1 egg, separated
- 1/2 tsp salt
- flour, as needed
Method
- 1 Pour 1/3 cup boiling water over potatoes, salt, and sugar; beat smooth until tepid.
- 2 Dissolve yeast in 1/2 cup tepid water; add to potato mixture, cover, and let rise overnight.
- 3 In the morning, boil milk and melt butter in it; cool slightly, then stir in beaten egg yolk.
- 4 Add milk mixture to the risen potato sponge; beat egg white to stiff peaks and fold in.
- 5 Add flour to form a soft dough; knead well and let rise again until very light.
- 6 Roll dough to 1/2 inch thick, cut into rounds, prick with a fork, and let rise briefly.
- 7 Bake at 350°F for 15 to 20 minutes.
