Potato Dinner Rolls

Ingredients

  • 1 cup mashed potatoes
  • 1 tbsp sugar
  • 1/2 cake yeast
  • 1/2 cup tepid water
  • 1/2 pint milk
  • 1/2 cup butter
  • 1 egg, separated
  • 1/2 tsp salt
  • flour, as needed

Method

  1. 1 Pour 1/3 cup boiling water over potatoes, salt, and sugar; beat smooth until tepid.
  2. 2 Dissolve yeast in 1/2 cup tepid water; add to potato mixture, cover, and let rise overnight.
  3. 3 In the morning, boil milk and melt butter in it; cool slightly, then stir in beaten egg yolk.
  4. 4 Add milk mixture to the risen potato sponge; beat egg white to stiff peaks and fold in.
  5. 5 Add flour to form a soft dough; knead well and let rise again until very light.
  6. 6 Roll dough to 1/2 inch thick, cut into rounds, prick with a fork, and let rise briefly.
  7. 7 Bake at 350°F for 15 to 20 minutes.
