Potato Crust Beef Pot Pie
Ingredients
- Cold roast beef, sliced thin, fat and gristle removed
- Beef bones and trimmings
- Cold water
- Sliced onion
- Sliced carrot
- Celery stalk
- Salt and pepper
- 2 cups flour
- 1/2 tsp salt
- 2 tsp baking powder
- 1/2 cup shortening
- 1 cup cold mashed potatoes
- Milk
Method
- 1 Simmer beef bones, trimmings, onion, carrot, and celery in water for several hours. Strain the broth.
- 2 Simmer the sliced beef in the strained broth until tender. Season with salt and pepper, then pour into a baking dish.
- 3 Sift flour, salt, and baking powder. Work in shortening, then add mashed potatoes and enough milk to form a soft dough.
- 4 Pat and roll the dough to fit the dish. Cover the meat, leaving an opening in the center. Bake for 15 minutes until crust is done.
