Potato Butter Semmel Rolls
Ingredients
- 1 cup mashed potatoes
- ¾ cup shortening
- ½ cup butter
- 1 cup sugar
- 1 tsp salt
- 2 eggs
- 1 cake yeast
- 1 cup warm water
- 6 cups flour
- butter for topping
- melted butter for brushing
- powdered sugar
- cinnamon
Method
- 1 In a mixing bowl, beat mashed potatoes, shortening, sugar, and salt until creamy. Add eggs and yeast dissolved in warm water. Stir in 2 cups flour to make a thin batter.
- 2 Cover and let the batter rise overnight. Once risen, stir in 4 cups of flour to form a stiff dough.
- 3 Roll dough to ½-inch thickness on a floured board. Cut into squares the size of soda crackers.
- 4 Bring the four corners of each square to the center and pinch together. Place a small piece of butter on top of each.
- 5 Place on greased baking sheets 2 inches apart. Let rise in a warm place until very light.
- 6 Bake in a 400°F oven for 15 to 20 minutes. While hot, brush with melted butter and dust with powdered sugar or cinnamon sugar.
