Potato Butter Semmel Rolls

Ingredients

  • 1 cup mashed potatoes
  • ¾ cup shortening
  • ½ cup butter
  • 1 cup sugar
  • 1 tsp salt
  • 2 eggs
  • 1 cake yeast
  • 1 cup warm water
  • 6 cups flour
  • butter for topping
  • melted butter for brushing
  • powdered sugar
  • cinnamon

Method

  1. 1 In a mixing bowl, beat mashed potatoes, shortening, sugar, and salt until creamy. Add eggs and yeast dissolved in warm water. Stir in 2 cups flour to make a thin batter.
  2. 2 Cover and let the batter rise overnight. Once risen, stir in 4 cups of flour to form a stiff dough.
  3. 3 Roll dough to ½-inch thickness on a floured board. Cut into squares the size of soda crackers.
  4. 4 Bring the four corners of each square to the center and pinch together. Place a small piece of butter on top of each.
  5. 5 Place on greased baking sheets 2 inches apart. Let rise in a warm place until very light.
  6. 6 Bake in a 400°F oven for 15 to 20 minutes. While hot, brush with melted butter and dust with powdered sugar or cinnamon sugar.
