  • 2 medium potatoes, peeled and sliced
  • 3 cups water
  • 1 yeast cake, crumbled
  • 1 tablespoon shortening
  • 2 tablespoons sugar
  • 2 teaspoons salt
  • 8 cups flour

Method

  1. 1 Boil potato slices in 3 cups water until very soft.
  2. 2 Rub potatoes through a sieve to make 2 cups of mixture; cool to 80°F.
  3. 3 In a mixing bowl, combine cooled potato mixture, yeast, shortening, sugar, and salt; stir to dissolve.
  4. 4 Add 8 cups flour and work into a dough.
  5. 5 Divide dough into 6 pieces; shape into loaves (3 inches thick, 12 inches long).
  6. 6 Let rise, then bake using standard bread baking methods.
