Potato Bread
Ingredients
- 2 medium potatoes, peeled and sliced
- 3 cups water
- 1 yeast cake, crumbled
- 1 tablespoon shortening
- 2 tablespoons sugar
- 2 teaspoons salt
- 8 cups flour
Method
- 1 Boil potato slices in 3 cups water until very soft.
- 2 Rub potatoes through a sieve to make 2 cups of mixture; cool to 80°F.
- 3 In a mixing bowl, combine cooled potato mixture, yeast, shortening, sugar, and salt; stir to dissolve.
- 4 Add 8 cups flour and work into a dough.
- 5 Divide dough into 6 pieces; shape into loaves (3 inches thick, 12 inches long).
- 6 Let rise, then bake using standard bread baking methods.
