Potato Beet And Apple Salad
Ingredients
- 3 cups potatoes, washed and cut in half
- 1 cup cooked beets, peeled and diced
- 3 cups green peas, fresh or frozen
- 1 hard-boiled egg
- 1 apple
- 1 teaspoon lemon juice
- 2 tablespoons olive oil
- 1 tablespoon vinegar
- sugar to taste
Method
- 1 Boil potatoes in 2 cups water in a deep kettle, covered, over moderate heat for 20 minutes until tender.
- 2 Let potatoes cool completely, then dice and place in a large bowl.
- 3 Add diced beets to the potatoes and mix well.
- 4 Set aside 1/4 cup of peas for garnish; add the remaining peas to the bowl.
- 5 Chop the hard-boiled egg (saving one whole egg for garnish) and add to the salad.
- 6 Peel and core the apple, cut into small pieces, toss with lemon juice, and add to the bowl.
- 7 Whisk together vinegar, olive oil, and sugar, then pour over the salad ingredients.
- 8 Toss thoroughly to combine, chill, and serve garnished with reserved peas and egg.
