Potato Beet And Apple Salad

Ingredients

  • 3 cups potatoes, washed and cut in half
  • 1 cup cooked beets, peeled and diced
  • 3 cups green peas, fresh or frozen
  • 1 hard-boiled egg
  • 1 apple
  • 1 teaspoon lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon vinegar
  • sugar to taste

Method

  1. 1 Boil potatoes in 2 cups water in a deep kettle, covered, over moderate heat for 20 minutes until tender.
  2. 2 Let potatoes cool completely, then dice and place in a large bowl.
  3. 3 Add diced beets to the potatoes and mix well.
  4. 4 Set aside 1/4 cup of peas for garnish; add the remaining peas to the bowl.
  5. 5 Chop the hard-boiled egg (saving one whole egg for garnish) and add to the salad.
  6. 6 Peel and core the apple, cut into small pieces, toss with lemon juice, and add to the bowl.
  7. 7 Whisk together vinegar, olive oil, and sugar, then pour over the salad ingredients.
  8. 8 Toss thoroughly to combine, chill, and serve garnished with reserved peas and egg.
