Potato Au Gratin

Ingredients

  • 1 pint cold boiled potatoes, diced
  • 1 tablespoon butter
  • 1 tablespoon flour
  • Salt and pepper to taste
  • 1 cup milk
  • 1 scant cup fine dry bread crumbs
  • 1 tablespoon melted butter

Method

  1. 1 Melt 1 tablespoon butter in a saucepan. Whisk in 1 tablespoon flour, salt, and pepper. Cook until mixed.
  2. 2 Stir in 1 cup milk and cook until smooth and thick. Add diced potatoes and simmer for 5 minutes.
  3. 3 Pour mixture into a buttered shallow baking dish. Top with bread crumbs mixed with 1 tablespoon melted butter.
  4. 4 Bake in a hot oven (425°F) until the crumbs are golden brown. Serve hot.
