Potato And Herb Omelette
Ingredients
- 6 egg yolks
- 3 egg whites
- 2 tablespoons finely mashed potatoes
- Butter for frying
- 1 tablespoon finely chopped parsley
- 1 tablespoon finely chopped chives or eschalots
Method
- 1 Whisk the egg yolks and whites together until just combined.
- 2 Fold in the mashed potatoes, chopped parsley, and chives or eschalots.
- 3 Heat a small frying pan over moderate heat and add a small quantity of butter.
- 4 Pour in the egg mixture and fry carefully, ensuring the outside does not brown too much.
- 5 Cook until the omelette is thick and moist, taking care not to overcook the center.
- 6 Fold the omelette in half and serve immediately without gravy.
