Ingredients

  • 8 cold boiled potatoes, chopped fine
  • 1 egg-sized pat of butter
  • 4 eggs, well beaten

Method

  1. 1 Melt a pat of butter (size of an egg) in a saucepan over medium heat.
  2. 2 Add the chopped cold boiled potatoes and stir frequently until browned.
  3. 3 Pour in the beaten eggs and stir well to combine with the potatoes.
  4. 4 Serve immediately while very hot.
