Ingredients

  • 4 good-sized boiled potatoes
  • 1 tsp salt
  • 4 tbsp heavy cream
  • 4 hard-boiled egg yolks
  • 1/8 tsp pepper
  • 2 tbsp olive oil
  • Brown bread, sliced and buttered
  • Cress or lettuce for garnish

Method

  1. 1 Mash the boiled potatoes until smooth.
  2. 2 Mix in salt, cream, mashed egg yolks, pepper, and olive oil until perfectly smooth.
  3. 3 Spread the mixture between slices of buttered brown bread.
  4. 4 Trim crusts and cut sandwiches into triangles.
  5. 5 Garnish with cress or lettuce before serving.
