Potato And Egg Salad Sandwiches
Ingredients
- 4 good-sized boiled potatoes
- 1 tsp salt
- 4 tbsp heavy cream
- 4 hard-boiled egg yolks
- 1/8 tsp pepper
- 2 tbsp olive oil
- Brown bread, sliced and buttered
- Cress or lettuce for garnish
Method
- 1 Mash the boiled potatoes until smooth.
- 2 Mix in salt, cream, mashed egg yolks, pepper, and olive oil until perfectly smooth.
- 3 Spread the mixture between slices of buttered brown bread.
- 4 Trim crusts and cut sandwiches into triangles.
- 5 Garnish with cress or lettuce before serving.
