Potato And Egg Breakfast Burritos

Ingredients

  • 1 cup vegetable oil
  • 1 onion, chopped
  • 3 bell peppers (red or green), chopped
  • 4 cups potatoes, finely chopped
  • 2 garlic cloves, pressed or finely chopped
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 egg, beaten
  • 9 tortillas (flour or corn)
  • 1/2 cup cheddar cheese, grated (optional)
  • hot sauce or salsa, as needed

Method

  1. 1 Heat vegetable oil in a large skillet over medium-high heat.
  2. 2 Add onion, bell peppers, potatoes, and garlic. Cook until potatoes are tender, about 10 minutes or longer if needed.
  3. 3 Reduce heat to medium. Push potato mixture to the sides to create a center well. Pour in beaten egg and scramble until firm.
