Potato And Egg Breakfast Burritos
Ingredients
- 1 cup vegetable oil
- 1 onion, chopped
- 3 bell peppers (red or green), chopped
- 4 cups potatoes, finely chopped
- 2 garlic cloves, pressed or finely chopped
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 1 egg, beaten
- 9 tortillas (flour or corn)
- 1/2 cup cheddar cheese, grated (optional)
- hot sauce or salsa, as needed
Method
- 1 Heat vegetable oil in a large skillet over medium-high heat.
- 2 Add onion, bell peppers, potatoes, and garlic. Cook until potatoes are tender, about 10 minutes or longer if needed.
- 3 Reduce heat to medium. Push potato mixture to the sides to create a center well. Pour in beaten egg and scramble until firm.
- 4 Stir the egg and potato mixture together. Season with salt and pepper.
- 5 Wrap the filling in tortillas and top with cheese, hot sauce, or salsa.
