Potato And Bean Pie
Ingredients
- 4 to 6 potatoes
- Cooked haricot beans
- 1 onion
- 1 tablespoon chopped mint or parsley
- Puff pastry or shortcrust pastry
Method
- 1 Parboil the potatoes until tender, then slice them.
- 2 Layer the sliced potatoes, sliced onion, and beans in a pie dish. Add a few tablespoons of the bean cooking liquid.
- 3 Sprinkle the chopped mint or parsley over the filling.
- 4 Cover with pastry and bake in a moderate oven (350°F) until the crust is golden brown.
