Potato, Anchovy, And Vegetable Salad
Ingredients
- 1 cup cooked potatoes, diced
- 1 cup peas
- 1 cup carrots
- 1 cup lima beans
- 1 cup celery, shredded
- 1 cup tomatoes, sliced
- 1 cup onion, chopped
- 1 cup cucumber, diced
- 1 can anchovies, broken into small bits
- French dressing (with extra vinegar)
Method
- 1 Dice the cooked potatoes, carrots, and cucumber. Shred the celery and chop the onion.
- 2 Slice the tomatoes and break the anchovies into small bits.
- 3 Combine all vegetables and anchovies in a large bowl.
- 4 Toss thoroughly with French dressing, ensuring there is more vinegar than usual.
