Porto Rico Molasses Ginger Cookies
Ingredients
- 2 cups Porto Rico molasses
- 1 cup brown sugar
- 1 cup butter
- 2 tablespoons ginger
- flour (enough to make stiff dough)
Method
- 1 Mix molasses, brown sugar, butter, and ginger. Add flour to form a stiff dough.
- 2 Knead the dough thoroughly. Ideally, make the day before to let it dry slightly.
- 3 Roll the dough thin. Cut into oblong shapes using a jagged iron or desired cutter.
