Port Wine Poached Pears

Ingredients

  • 1 dozen moderate-sized pears
  • ½ pound white sugar
  • ¼ cup water
  • cinnamon sticks
  • lemon peel
  • 1 glass port wine

Method

  1. 1 Peel pears but leave stems on. Place in a preserving pan with sugar, water, cinnamon sticks, and lemon peel.
  2. 2 Simmer pears until half done, then add the glass of port wine.
  3. 3 Continue simmering until pears are tender. Remove pears and place in a deep dish.
  4. 4 Strain the syrup, bring it to a boil, and pour it over the pears.
