Port Wine Poached Pears
Ingredients
- 1 dozen moderate-sized pears
- ½ pound white sugar
- ¼ cup water
- cinnamon sticks
- lemon peel
- 1 glass port wine
Method
- 1 Peel pears but leave stems on. Place in a preserving pan with sugar, water, cinnamon sticks, and lemon peel.
- 2 Simmer pears until half done, then add the glass of port wine.
- 3 Continue simmering until pears are tender. Remove pears and place in a deep dish.
- 4 Strain the syrup, bring it to a boil, and pour it over the pears.
