Port Wine Duck With Anchovy Gravy

Ingredients

  • 2 ducks, divided into quarters
  • Flour
  • Pepper
  • Salt
  • Butter
  • ½ cup gravy
  • ½ cup port wine
  • Bouquet garni
  • 3 minced shallots
  • 1 anchovy
  • Cayenne pepper

Method

  1. 1 Place duck quarters in a stewpan. Sprinkle with flour, pepper, and salt.
  2. 2 Add butter and fry the ducks until brown. Remove excess fat.
  3. 3 Add gravy, port wine, more flour, bouquet garni, shallots, anchovy, and cayenne.
  4. 4 Stew for 20 minutes. Remove herbs, skim fat, and serve sauce over duck.
