Port Wine Duck With Anchovy Gravy
Ingredients
- 2 ducks, divided into quarters
- Flour
- Pepper
- Salt
- Butter
- ½ cup gravy
- ½ cup port wine
- Bouquet garni
- 3 minced shallots
- 1 anchovy
- Cayenne pepper
Method
- 1 Place duck quarters in a stewpan. Sprinkle with flour, pepper, and salt.
- 2 Add butter and fry the ducks until brown. Remove excess fat.
- 3 Add gravy, port wine, more flour, bouquet garni, shallots, anchovy, and cayenne.
- 4 Stew for 20 minutes. Remove herbs, skim fat, and serve sauce over duck.
