Pork Taco Cups With Tomato Salsa

Ingredients

  • 1/2 cup low-fat shredded cheddar cheese
  • 1/2 tablespoon vegetable oil
  • 1 small white onion, chopped
  • 1 tablespoon garlic, minced
  • 1 pound ground pork
  • 1/2 yellow bell pepper, seeded and diced
  • 1/2 green bell pepper, seeded and diced
  • 1 cup baby spinach, shredded
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground black pepper
  • 1 cup heirloom cherry tomatoes, quartered
  • 1 lime, juiced
  • 4 tablespoons fresh cilantro, chopped

Method

  1. 1 Wash hands. Heat oil in a large skillet over medium heat. Add chopped onion and stir occasionally until softened, about 5 minutes.
  2. 2 Add garlic, ground pork, diced peppers, and spinach. Stir to crumble meat and cook until no longer pink, about 6 minutes.
  3. 3 Add chili powder, salt, cumin, paprika, and black pepper. Stir to combine and brown meat for 2-3 more minutes until internal temperature reaches 160°F. Remove from heat.
  4. 4 In a small bowl, combine tomatoes, lime juice, and cilantro. Season with salt if desired.
  5. 5 Arrange 12 serving cups on a platter. Fill with the cooked pork mixture and top with the tomato mixture and cheese. Serve immediately.
