Pork And Vegetable Stew With Dumplings
Ingredients
- 3 lbs pork, cut into 1-inch cubes
- 1 large onion, sliced
- 1 tsp chopped sage
- 1 tsp chopped thyme
- 1 tsp chopped parsley
- 5 pints water
- 1 large pepper, chopped small (or pinch of cayenne)
- 1 tbsp salt
- 3 pints mixed vegetables (carrots, turnips, parsnips), cut small
- 1 pint potatoes, cut into small pieces
- 1 cup flour
- 1 tsp salt
- 1 tsp baking powder
- 2 eggs, well beaten
- 1 cup milk
Method
- 1 Cut pork into 1-inch cubes. If using salt pork, soak to freshen. Fry pork in a large pot until browned.
- 2 Add sliced onion, sage, thyme, and parsley. Pour in 5 pints water and boil for 2 hours.
- 3 Add chopped pepper (or cayenne) and salt. Stir in carrots, turnips, and parsnips; boil for 30 minutes.
- 4 Add potatoes and cover closely. Boil for 20 minutes.
- 5 While stew simmers, sift flour, salt, and baking powder. Mix in beaten eggs and milk to form a batter.
- 6 Drop spoonfuls of dumpling batter into the stew. Cover and boil for 20 minutes until dumplings are cooked through. Serve hot.
