Pork And Vegetable Stew With Dumplings

Ingredients

  • 3 lbs pork, cut into 1-inch cubes
  • 1 large onion, sliced
  • 1 tsp chopped sage
  • 1 tsp chopped thyme
  • 1 tsp chopped parsley
  • 5 pints water
  • 1 large pepper, chopped small (or pinch of cayenne)
  • 1 tbsp salt
  • 3 pints mixed vegetables (carrots, turnips, parsnips), cut small
  • 1 pint potatoes, cut into small pieces
  • 1 cup flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 2 eggs, well beaten
  • 1 cup milk

Method

  1. 1 Cut pork into 1-inch cubes. If using salt pork, soak to freshen. Fry pork in a large pot until browned.
  2. 2 Add sliced onion, sage, thyme, and parsley. Pour in 5 pints water and boil for 2 hours.
  3. 3 Add chopped pepper (or cayenne) and salt. Stir in carrots, turnips, and parsnips; boil for 30 minutes.
  4. 4 Add potatoes and cover closely. Boil for 20 minutes.
  5. 5 While stew simmers, sift flour, salt, and baking powder. Mix in beaten eggs and milk to form a batter.
  6. 6 Drop spoonfuls of dumpling batter into the stew. Cover and boil for 20 minutes until dumplings are cooked through. Serve hot.
