Pork And Rice Pilaf
Ingredients
- 4 lbs pork
- 2 lbs bacon
- 1 pepper pod
- A few sage leaves
- A few celery stalks
- 2 quarts pork broth (strained)
- 1 pint tomatoes, peeled
- 1 small onion, finely chopped
- Salt to taste
- 1 pint rice, well washed
Method
- 1 Place pork, bacon, pepper pod, sage, and celery in a large pot with plenty of water. Boil for 3 to 4 hours until pork is tender.
- 2 About one hour before serving, strain 2 quarts of the cooking liquid into a separate pot.
- 3 Add peeled tomatoes, chopped onion, and salt to the broth. Boil for 30 minutes.
- 4 Stir in the washed rice. Bring to a boil, then reduce heat to low.
- 5 Cover and steam until the rice is cooked and the liquid is absorbed. Serve with the sliced pork.
