Pork And Okra Gumbo

Ingredients

  • 2 lbs lean pork, cut into small dice
  • 2 onions, sliced
  • 3 bell peppers, sliced
  • 2 quarts peeled tomatoes
  • 2 teaspoons salt
  • 1 pint young tender okra pods, peeled and cut small
  • Rice or hominy, for serving
  • Corn, cut from cobs (optional substitute for okra)

Method

  1. 1 Cut pork into small dice. Fry in a lined saucepan until pale brown.
  2. 2 Add sliced onions and cook until brown. Add sliced bell peppers and peeled tomatoes with salt.
  3. 3 Bring to a gentle boil, stirring frequently, and simmer for 1½ hours.
  4. 4 Add peeled and chopped okra pods. Cover and boil for another 30 minutes.
  5. 5 Serve hot over a large dish of rice or hominy. Substitute corn for okra if desired.
