Pork And Okra Gumbo
Ingredients
- 2 lbs lean pork, cut into small dice
- 2 onions, sliced
- 3 bell peppers, sliced
- 2 quarts peeled tomatoes
- 2 teaspoons salt
- 1 pint young tender okra pods, peeled and cut small
- Rice or hominy, for serving
- Corn, cut from cobs (optional substitute for okra)
Method
- 1 Cut pork into small dice. Fry in a lined saucepan until pale brown.
- 2 Add sliced onions and cook until brown. Add sliced bell peppers and peeled tomatoes with salt.
- 3 Bring to a gentle boil, stirring frequently, and simmer for 1½ hours.
- 4 Add peeled and chopped okra pods. Cover and boil for another 30 minutes.
- 5 Serve hot over a large dish of rice or hominy. Substitute corn for okra if desired.
