Pork And Chicken Sausage
Ingredients
- 1 cup sweet leaf lard
- 1 dozen small onions, sliced
- ½ lb fresh pork
- ½ lb chicken or fowl meat (dark and white)
- Fine bread crumbs (as needed for consistency)
- Salt and pepper
- 1 spoonful mixed dried herbs
- 1 cup sweet cream
- 3 eggs, well-beaten
- Pig entrails (for casing)
Method
- 1 Cook sliced onions in lard in a saucepan.
- 2 Grind pork and chicken through a meat chopper.
- 3 Add meat to onions and stir in bread crumbs until mixture resembles a soft dough.
- 4 Season with salt, pepper, and dried herbs, then stir in cream and beaten eggs until eggs are set.
- 5 Stuff mixture into pig entrails to form 6-inch links.
- 6 Store in a cool place and cook like sausage, or pack in jars to slice and sauté cold.
