Poached Whole Fish
Ingredients
- 1 whole fish, thoroughly cleansed
- 2 tablespoonfuls salt
- 2 tablespoonfuls vinegar
- cloth or piece of muslin
Method
- 1 Place the cleansed fish on a fish-strainer and tie a cloth or piece of muslin over it to prevent scum from settling.
- 2 Immerse the fish in boiling water to which salt and vinegar have been added.
- 3 Boil for three minutes to set the albumen and form a casing.
- 4 Move the kettle to the side of the fire and simmer gently until the fish is opaque and pulls away from the bone.
- 5 Remove the cloth, drain the fish on the strainer, and cover with a hot lid for a few minutes.
- 6 Dish on a folded napkin or strainer, garnish, and serve with an appropriate sauce.
