Poached Trout In White Wine

Ingredients

  • 1 trout, cleaned, scaled, washed, and wiped
  • Salt for seasoning
  • 1 quart white wine
  • 3 medium onions
  • Few cloves
  • 2 sections garlic
  • 1 small bunch thyme, bay leaf, basil, or mint
  • 1 egg-sized piece butter, dipped in flour

Method

  1. 1 Salt the trout and let it sit for about an hour. Rinse if desired.
  2. 2 In a fish kettle, combine wine, onions, cloves, garlic, herb bunch, and butter-dipped-in-flour.
  3. 3 Add the trout to the kettle and place over strong fire.
  4. 4 Bring liquid to a boil; cook until done. Remove aromatics and serve with parsley.
