Poached Trout In White Wine
Ingredients
- 1 trout, cleaned, scaled, washed, and wiped
- Salt for seasoning
- 1 quart white wine
- 3 medium onions
- Few cloves
- 2 sections garlic
- 1 small bunch thyme, bay leaf, basil, or mint
- 1 egg-sized piece butter, dipped in flour
Method
- 1 Salt the trout and let it sit for about an hour. Rinse if desired.
- 2 In a fish kettle, combine wine, onions, cloves, garlic, herb bunch, and butter-dipped-in-flour.
- 3 Add the trout to the kettle and place over strong fire.
- 4 Bring liquid to a boil; cook until done. Remove aromatics and serve with parsley.
