Poached Sole With Lemon And Parsley

Ingredients

  • 1 fresh thick sole
  • 1 handful salt
  • cold water to cover
  • slices of lemon
  • sprigs of curled parsley

Method

  1. 1 Wash and clean the sole thoroughly.
  2. 2 Place the fish in a fish-kettle with a handful of salt and enough cold water to cover it.
  3. 3 Set the kettle on the side of the fire and bring to a gentle boil, skimming off the scum as it rises.
  4. 4 Boil gently for about five minutes, or longer if the fish is very large.
  5. 5 Remove the sole and place it on a fish-drainer.
  6. 6 Garnish with slices of lemon and sprigs of curled parsley before serving.
