Poached Sole With Lemon And Parsley
Ingredients
- 1 fresh thick sole
- 1 handful salt
- cold water to cover
- slices of lemon
- sprigs of curled parsley
Method
- 1 Wash and clean the sole thoroughly.
- 2 Place the fish in a fish-kettle with a handful of salt and enough cold water to cover it.
- 3 Set the kettle on the side of the fire and bring to a gentle boil, skimming off the scum as it rises.
- 4 Boil gently for about five minutes, or longer if the fish is very large.
- 5 Remove the sole and place it on a fish-drainer.
- 6 Garnish with slices of lemon and sprigs of curled parsley before serving.
