Poached Sole With Eggs And Leeks

Ingredients

  • 1 sole, scaled and cleaned
  • Broth
  • Oil
  • White wine
  • 1 bunch leeks
  • Coriander seed
  • Pepper
  • Origany (oregano)
  • 10 raw eggs

Method

  1. 1 Place the cleaned sole in a shallow saucepan with broth, oil, white wine, leeks, and coriander seed. Cook over heat.
  2. 2 Grind pepper and origany, then moisten with some of the fish cooking liquid.
  3. 3 Beat the 10 raw eggs and mix them with the remaining fish liquid.
  4. 4 Pour the egg mixture over the fish. Heat gently on a slow fire without boiling until thickened to the right consistency.
  5. 5 Sprinkle with pepper and serve.
