Poached Shad With Horseradish Butter Sauce
Ingredients
- 1 whole shad, fresh
- 1/4 cup pale vinegar
- salt to taste
- 1 clove garlic, crushed
- 1 bundle fresh parsley
- 1 cup melted butter
- 1/4 cup grated horseradish
- catsup to taste
Method
- 1 Place the shad in a kettle with cold water, vinegar, salt, garlic, and parsley.
- 2 Boil gently until the fish is cooked through, ensuring the skin does not crack.
- 3 Drain the water and transfer the fish to a serving dish.
- 4 Garnish with grated horseradish and serve with melted butter and catsup.
