Poached Seasoned Meatballs

Ingredients

  • cooked meat, chopped very fine
  • salt
  • pepper
  • thyme
  • onion juice
  • lemon juice
  • herbs (optional)
  • egg yolk
  • flour for rolling

Method

  1. 1 Chop cooked meat very fine and season with salt, pepper, thyme, onion juice, lemon juice, and herbs if desired.
  2. 2 Add enough egg yolk to moisten and bind the meat mixture.
  3. 3 Mold the mixture into balls, approximately 1/2 inch in diameter.
  4. 4 Roll the balls in flour.
  5. 5 Poach in boiling water or fry in butter until cooked through.
