Poached Salmon With Lemon Caper Sauce

Ingredients

  • 1 small salmon
  • Salted and acidulated water
  • 1 tbsp butter
  • 1 tbsp flour
  • 2 tbsp chopped capers
  • 1 tbsp chopped parsley
  • Juice of 1 lemon
  • 1 tbsp butter

Method

  1. 1 Boil the salmon in salted and acidulated water. Remove carefully.
  2. 2 Reduce the cooking liquid by rapid boiling until only two cupfuls remain.
  3. 3 Cook butter and flour together, then add the reduced liquid. Stir constantly until thick.
  4. 4 Remove from heat. Stir in capers, parsley, lemon juice, and butter.
  5. 5 Pour the sauce over the fish and serve immediately.
