Poached Salmon With Lemon Caper Sauce
Ingredients
- 1 small salmon
- Salted and acidulated water
- 1 tbsp butter
- 1 tbsp flour
- 2 tbsp chopped capers
- 1 tbsp chopped parsley
- Juice of 1 lemon
- 1 tbsp butter
Method
- 1 Boil the salmon in salted and acidulated water. Remove carefully.
- 2 Reduce the cooking liquid by rapid boiling until only two cupfuls remain.
- 3 Cook butter and flour together, then add the reduced liquid. Stir constantly until thick.
- 4 Remove from heat. Stir in capers, parsley, lemon juice, and butter.
- 5 Pour the sauce over the fish and serve immediately.
