Poached Pike With Mushrooms Truffles And Morels
Ingredients
- 1 whole pike, cleaned and split
- Salt and water for poaching
- 1 cup mushrooms, chopped
- 1 cup truffles, chopped
- 1 cup morels, chopped
- 1 bunch sweet herbs
- 1 cup capers, chopped
- 3 anchovies, split and shredded
- 2 tbsp butter
- 1 tbsp flour
- 1 tbsp grated Parmesan cheese
- 1 cup white wine
Method
- 1 Clean and split the pike down the back. Poach in salted water over medium heat until half-cooked.
- 2 Remove fish, scale it, and return to the pan with a little water, mushrooms, truffles, morels, and sweet herbs.
- 3 Stew gently over low heat, covered, until nearly done. Remove herbs.
- 4 Stir in capers, anchovies, butter rolled in flour, and Parmesan cheese.
- 5 Add white wine, cover tightly, and simmer until fish is fully cooked and sauce thickens.
- 6 Serve fish in a warm dish, pouring the sauce over the top.
