Poached Pears With Reduced Syrup

Ingredients

  • 1 quart peeled, cored, and quartered pears
  • ½ cup sugar
  • 1 cup water
  • cream, for serving

Method

  1. 1 Place pears, sugar, and water in an earthen baking dish.
  2. 2 Cover tightly and bake in a moderate oven (350°F) for several hours until tender.
  3. 3 Remove pears and boil the remaining syrup rapidly to reduce.
  4. 4 Pour the reduced syrup over the pears, chill, and serve with cream.
