Poached Pears Over Vanilla Rice
Ingredients
- 4 large pears, halved
- 1 pint claret, Burgundy, or water
- 8 ounces sugar
- ¾ cup rice, boiled in milk and sweetened
- Vanilla extract, for flavoring
Method
- 1 Place halved pears in a stewpan with wine or water and sugar.
- 2 Simmer pears until perfectly tender, then remove them.
- 3 Boil the syrup down to half its volume and flavor with vanilla.
- 4 Spread the boiled rice on a serving dish.
- 5 Arrange pears on the rice and pour the syrup over.
- 6 Serve cold.
