Poached Pears Over Vanilla Rice

Ingredients

  • 4 large pears, halved
  • 1 pint claret, Burgundy, or water
  • 8 ounces sugar
  • ¾ cup rice, boiled in milk and sweetened
  • Vanilla extract, for flavoring

Method

  1. 1 Place halved pears in a stewpan with wine or water and sugar.
  2. 2 Simmer pears until perfectly tender, then remove them.
  3. 3 Boil the syrup down to half its volume and flavor with vanilla.
  4. 4 Spread the boiled rice on a serving dish.
  5. 5 Arrange pears on the rice and pour the syrup over.
  6. 6 Serve cold.
