Poached Peaches In Madeira Wine
Ingredients
- peaches
- water
- Madeira or Moselle wine
- vanilla sugar
- sugar to taste
Method
- 1 Place peaches in a stewpan, cover with water, and boil for 10 minutes to loosen skins. Remove skins.
- 2 Place peeled peaches in a shallow dish. Cover with Madeira or Moselle wine and let stand for at least 2 hours.
- 3 Drain the peaches and arrange them in a serving dish.
- 4 Pour the wine used for soaking into a saucepan. Add sugar to taste and bring to a boil.
- 5 Sprinkle vanilla sugar over the peaches, then pour the hot wine sauce over them to serve.
