Poached Peaches In Madeira Wine

Ingredients

  • peaches
  • water
  • Madeira or Moselle wine
  • vanilla sugar
  • sugar to taste

Method

  1. 1 Place peaches in a stewpan, cover with water, and boil for 10 minutes to loosen skins. Remove skins.
  2. 2 Place peeled peaches in a shallow dish. Cover with Madeira or Moselle wine and let stand for at least 2 hours.
  3. 3 Drain the peaches and arrange them in a serving dish.
  4. 4 Pour the wine used for soaking into a saucepan. Add sugar to taste and bring to a boil.
  5. 5 Sprinkle vanilla sugar over the peaches, then pour the hot wine sauce over them to serve.
