Poached Oysters On Toast
Ingredients
- 4-5 tbsp oyster liquor
- Salt
- White pepper
- 1 tbsp butter
- 12 oysters
- Slices of buttered toast
Method
- 1 Add oyster liquor, salt, white pepper, and butter to a chafing dish. Stir over heat until scalding hot.
- 2 Drop oysters into the hot liquid in batches of a dozen. Cook until plump and tender, then skim out.
- 3 Place cooked oysters on slices of hot buttered toast. Add more oysters as required.
