Poached Oysters On Toast

Ingredients

  • 4-5 tbsp oyster liquor
  • Salt
  • White pepper
  • 1 tbsp butter
  • 12 oysters
  • Slices of buttered toast

Method

  1. 1 Add oyster liquor, salt, white pepper, and butter to a chafing dish. Stir over heat until scalding hot.
  2. 2 Drop oysters into the hot liquid in batches of a dozen. Cook until plump and tender, then skim out.
  3. 3 Place cooked oysters on slices of hot buttered toast. Add more oysters as required.
